Vegetarian Recipe

 

Hello my Sweeties,

Like I promised you yesterday, I have a very simple and easy to make vegetarian recipe for you guys.  You can either have it as is, or you can add any kind of protein you like to it, such as chicken ( this is what I do sometimes ).  I came up with this recipe by a complete accident, I had almost no food in the fridge because I had not time to go groceries shopping, so I had to work with what I found, which was only 4 ingredients.  If you are a vegetarian, this is a perfect meal, because I’ve combined Long Grain Jasmine Brown Rice and Red Lentils, which makes a complete protein.

 

Ingredients:

 

Easy Vegetarian Recipe

 

  • 1 cup of Organic Jasmine Rice
  • 1 cup of Red Lentils
  • Leaves of Fresh Basil ( I have several plants, so I always have fresh herbs in the house )
  • Half of a container of Organic Pasta Sauce, I used Italian Herb, but you can use what every you like

And Salt obviously 🙂

 

Preparation 

Wash the rice very well, also wash the lentils.  Add 2.5 cups of water to the pan with rice. First you will let the rice boil on low heat for 25 minutes.  Then you will add the lentils and let it boil for an additional 10-15 minutes ( check on it in 10 minutes ).  I don’t like my lentils overcooked, so I check in 10 minutes, sometimes it’s cooked and sometimes I have to wait an additional 5 minutes.

Once both the rice and the lentils have cooked, add the pasta sauce and basil leaves ( cut the basil leaves in small pieces first ):

 

Vegetarian Recipe

 

Mix the pasta sauce and basil inn really well, at this time I also usually add the salt.  I’ve noticed if I salt my rice at the end, I end up using a lot less salt. Cover the pan, and let it stand for about 15 minutes for the rice and lentils to absorb the flavors.
