Yesterday I made another one of your recipes, this one was a healthy pancake recipe from Evaleen. Thank you Evaleen they were absolutely splendid!!! The recipe was very easy to make and the ingredients were very simple. I changed the recipe just a bit because I didn’t have a few of the items but I will post the original recipe that Evaleen gave me as well as the one I used.

I hope you’ve had a fabulous weekend! Welcome to the NO Sugar Challenge for this week! This challenge is going to last from today – Monday until Sunday. I noticed that a lot of you are on board so that makes me very exited and motivated. I periodically do these types of challenged from time to time because it’s good to get rid of the excess sugar in our body. Good thing I love my coffee black he he :).

Today’s recipe is from Daybelis, she shared it with me a little while ago and this morning I made her healthy mini pancakes. I loved it and my Miguel ( my husband ) loved it as well, the mini pancakes were gone within 5 minutes.

Today I wanted to share a little more about nutrition. When we seek nutrition advice, most of us usually try to find info on the right amount of protein, carbohydrates and fats that we should consume. Fiber gets’ mentioned a lot less but it plays a big role in our nutrition. Most foods are all digested and absorbed by our body, fiber is very hard to digest so it’s only digested partially and it contains no nutrients, but it helps to promote efficient intestinal function and helps to regulate the absorption of sugars into the bloodstream.
