Protein Energy Cookies Recipe
It seems that no matter where I go ( unless it’s a health food store ), I can’t find great energy bars that have no preservatives and have a lot of protein. So far my favorite health bars are Larabars ( they are preservative free but they don’t as much protein as I like ), and I also love Clif Kid bars ( these give you great energy, but they are loaded with sugar and also don’t have much protein ). So I decided to make my own, this way I know all of the ingredients are good for me, they are preservative free, have no added sugar and are loaded with protein, not to mention taste great.
I am always trying to find a way to eat healthy without living in my kitchen and don’t like complicated recipes, everything that I make usually only has few ingredients. These cookies are made today were so heavenly that I already ate 3, now I am off to running like a rabbit ;).
Here is the recipe: ( my editing software broke about a week ago and until I get a new one, the pictures are definitely not the food vogue cover material ).
The Ingredients:
- Old Fashioned Oats – 1.5 cups ( Please don’t ever buy quick 5 minute oats, because they are heavily processed. Only purchase Old Fashioned Oats ).
- Raw Almonds – 2 handfuls
- 1 handful of Flax Seeds
- 2 Organic Eggs
- 1 Package of Dried Apricots 6 oz ( If you can get them unsulfured it’s better cause that is the best kind, they are also low glycemic 😉 ).
- Whey Isolate Protein Powder 2 full scoops ( I am using Dymatize at the moment and I really like that brand cause it tastes great ).
- Unsweetened Almond Milk – 1/4 of a cup ( I forgot to add it to the picture ).
- Organic Coconut Oil – 3 table spoons
Place Oats, Almonds and Flax Seeds into a blender.
Blend everything into a smooth mixture. Place it into a mixing bowl, now add the eggs, almond milk, coconut oil, protein power and dried apricots ( make sure you cut the apricots into small pieces first ).
Preheat your oven to 350 degrees. Place the baking sheet on a backing tray. Place the dough with a table spoon onto the the tray, I did’t really create any shapes cause the dough is a bit sticky. But you don’t need any cooking spray, the cookies will not stick cause there is coconut oil in the mixture.
Bake it for 25 minutes and cool it for 5.
